Anyway, here's a little vegetarian ditty I love. Great for lunch, if you have the time, or a light dinner. You could pair it with a small salad. Seriously though, mushrooms don't fair well with the rest of my family, so this is a for-me-only meal. I know this may sound horrid to you now, but trust me, if you like mushrooms and hummus separately, you'll love them together-ly. {It just sounded right} Sorry to hubby who HATES the fact that I add LY to words.
Mushroom Hummus Burritos
Pretty simple. Just saute your mushrooms in some EVOO with a tad of minced garlic and a pinch of S & P.
Cook them to your tenderness/firmness preference. Spread a layer of hummus down the middle of a cooked or heated tortilla, top with mushrooms, and Wha-La. Done.

The spinach thing is genius and the burrito looks tasty :) We have been eating meatless a lot and are getting pretty used to it. Lots of good recipes so far!

I'm going to try that with the spinach, for myself:) Even though I like fresh spinach salad, it would be nice to add it to a smoothie for added health benefits. You're sneaky:)
